He said he based his corned beef recipe on one from a cookbook by Catskills resort owner Jennie Grossinger. But he cranked the recipe up a bit and extended the cooking time by a few minutes. The corned beef soaks in the recipe for two weeks before cooking. Irish Heather owner Sean Heather is considering making this a regular menu feature.
